Tasting Notes:

Deep purple color with aromas of ripe black fruit, plum, blackberry, and floral notes of violet and lavender.  There are also hints of smoked meat and leather from the oak ageing. On the palate, the wine is dry and full-bodied with very good acidity and well-integrated tannins. A full-flavored red wine is ideal to pair with red meats in general like lamb, or steak.

Winemaking:

The grapes are harvested during the first week of October. Once at the winery the grapes are crushed and placed in stainless steel vats for cooling for three days at 60F. After this, we add yeast and it ferments at approximately 80F. Once fermentation is complete we press the grapes and the wine goes into French and American Oak Barrels for six months. After this, the wine is bottled and stored in the cellar for another six months.
